Whole rye from Hollin Bank, fermented overnight for a gentle sourdough tang, showered in flaky sea salt and baked until it snaps like a twig in January.

    0–30 cm · Topsoil

    The thin bit that feeds us

    Nearly all our food grows in the top 30 cm of the planet. Nature takes centuries to build 2.5 cm of it; a bare, ploughed field can lose that in a few wet winters.

    30–60 cm · Roots

    Carbon’s delivery drivers

    Plants pull CO₂ out of the air and pipe it underground as root sugars. Keep something growing all year — rye, clover, cover crops — and the deliveries never stop.

    40–90 cm · Fungi

    The underground internet

    Mycorrhizal threads trade water and minerals for sugar and knit soil into crumbs that hold rain like a sponge. A teaspoon can hold hundreds of metres of them. Ploughing snaps them, so our farms don’t.

    60–120 cm · Worms

    The night shift

    Worms dig drainage, drag leaves down and leave behind the best fertiliser money can’t buy. Our farms average 280 per m² — about three times the conventional field next door.

Four farms, first names, soil tests every spring. We pay 20% over market for grain grown to our soil standard — then we go and check the soil, not just the paperwork.
